So I just experimented with these tasty treats and they actually came out pretty good. I have had this huge bag of Quinoa that I keep meaning to use for something and I finally found a good recipe. I am still not sure if most people cook the quinoa first but I did not and it came out edible 😊. This is the recipe I came up with for the Granola Bars…
1 1/4 Cup Rolled Oats
1 Cup of uncooked Quinoa
1/4-1/2 cup of pecans
1/4-1/2 cup of Walnuts
1/4 cup flax seed
Optional- Add coconut flakes and raisins.
Mix all the ingredients together in a bowl then in a separate container heat up 1/2 Cup of Coconut oil, 1/2 Cup of Honey and 1 cup of peanut butter. Heat and stir until smooth. Then pour on granola mixture and stir until it’s completely covered. Then press it down into a dish to store in the refrigerator. Sprinkle chocolate chips on the top if you want to add a little sweet. This also works well with just oats so if you want to omit the quinoa I would just use 3 cups of Oats. It does have a crunchy texture from the quinoa being uncooked. Cut and enjoy once they are chilled.
